Demand for organic foods is leading to a shortage of eggs in the United States. Fresh eggs are generally limited in the winter due to the cold’s impact on chickens who would rather save their energy to stay warm than lay eggs. Adding to that, colder than normal conditions across much of the country have left many farmers struggling to put produce on store shelves, giving away eggs on a first-come first-served basis.
